The hotel is the Riad Maison Bleue and Spa. It is a combination of three riads (a riad is like a townhouse with an internal garden and fountain) in the old medina in Fes. A quiet refuge from the hubbub of the surrounding medina, the rooms are comfortable and the hotel staff is friendly and helpful. The views from the roof are spectacular, and you feel like you have been transported back a thousand years. The hotel is within walking distance to all the important sights (we would advise you hire a guide since you can easily get lost) including the ancient Chouara Tannery (they give you mint to hold in front of your nose to mask the smell!), the markets and the mosques. At the end of a day of touring or going to cooking school (that?s Chicken Tagine with Preserved Lemons I?m making), enjoy a good book, some fresh olives and a glass of cold sauvignon blanc and listen to the evening prayers rise above the town from the dozens of minarets near the hotel.
