Ingredients
Ranchero Salsa
1 large tomato
½ jalapeno pepper, diced
1 tablespoon diced green chili
2 scallions, chopped
Juice of ½ lime
2 tablespoons chopped cilantro
1 garlic clove, minced
¼ teaspoon kosher salt
1 lb. medium shrimp, cleaned and deveined
1 tablespoon canola oil
2 tablespoons tequila
Directions
Combine all ingredients for salsa and mix well.
In a large sauté pan, briefly sauté shrimp in canola oil over medium heat, approximately two minutes. Add tequila and cook until evaporated, about 30 seconds.
Add salsa and finish cooking until shrimp are pink. Do not overcook.
