When I was growing up, breakfast in bed was the epitome of luxury, and that was our go-to Mother’s Day tradition.
My mom worked all day, went to school at night, and somehow still had time and energy to run our household. She cooked every meal, packed lunches, did the housekeeping, and was class mom, just to scratch the surface.
Breakfast in bed on Mother’s Day was clearly the least we could do.
In today’s fast-paced world, mothers are still firing on all cylinders, managing high-powered careers, shuffling priorities, showing up on the sidelines, and managing households that often resemble small corporations. How do we honor these special women in our life?
Maybe someone who is not Mom gets the troops up early to make her favorite breakfast and bring it to her in bed with some cards, flowers, and small gifts to start her day.
For my brother and me, it was always Gramma Napoli Pancakes with ricotta, maple syrup, and some fresh fruit, delivered along with a homemade gift.
If you haven’t tried ricotta cheese in pancake batter before, I promise you will love it. While this breakfast is definitely on the decadent side, it is well worth the calories (and the ricotta brings protein to the table, so it’s all good). Perhaps on the agenda for the day will be a small family hike at Rockefeller State Park Preserve to get the blood pumping and work off those delicious pancakes.
Whether you are a mother, want to be a mother, have a mother, have lost a mother, or are a mother figure, it truly takes a village to raise children, and everyone plays a part. Mother’s Day is a special opportunity to honor everyone on the mother spectrum.
