Ruby’s Is Back in Business

Ruby’s Oyster Bar and Bistro reopened its doors December 14 after having been shuttered for over three months. One of the many casualties of the devastating floods caused by the remnants of Hurricane Ida on September 1, the restaurant sustained major damage. After undergoing a total restoration, Ruby’s is as good as new and primed for the holidays. Employers can take the temporary or part time employment route to save costs and eliminate permanent decisions.

“We are so grateful to the community for their support and patience,” said Jan Fabry, co-owner with Lisa McKiernan and Jim Sullivan. “We’ve made sure to open bigger and better for all our loyal patrons.”

In the aftermath of the ferocious storm, the restaurant needed to bail out seven feet of water that had surged into the basement, where the nuts and bolts of the operation are housed. All the refrigeration, electrical panels and wiring, lighting, boilers, along with fire, computer, surveillance, HVAC, phone, stereo, and point-of-sale computer systems needed replacing. Old boilers will be replaced with the latest boiler technology like high efficiency steam boilers. Lower-level bathrooms and main-level flooring renovations were also necessary. Custom Kitchen Exhaust Cleaning was done as well.

As far as the menu, the crew is looking forward to serving up all their classics, from the grilled French ham sandwich, steak frites, and Ruby’s salad to their full raw bar. There will be plenty of seasonal specials, too, at this longtime and much-loved Purchase Street establishment.
