<Ingredients> 

1 10-ounce box of couscous (1½ cups) 

6 scallions, sliced 

4 tomatoes, cut in 1-inch dice 

1 seedless cucumber, cut into half moons 

3 tablespoons fresh lemon juice 

3 tablespoons extra virgin olive oil 

1¼ teaspoon kosher salt 

½ t. freshly ground pepper 

1 cup feta cheese, optional 

¼ cup toasted pine nuts, optional 

<Directions> 

Place the couscous in a large bowl and pour 1½ cups of hot tap water over the top. Cover and let stand for 5 minutes; fluff with fork. Let cool. Add the scallions, tomatoes, cucumber, lemon juice, olive oil, and salt and pepper and toss. Check for seasoning and adjust.
